Raspberry Peach Muffins

Ingredients

  • 2 Daiya Peach Greek Yogurt Alternative
  • 3/4 cup dairy-free milk of choice
  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup olive oil
  • 1 flax egg, (combine 1 tbsp of ground flax + 3 tbsp of water)
  • 1 cup fresh raspberries

Instructions

Preheat oven to 400 degrees F. Grease of paper line cups in muffin tin.

In a mixing bowl combine dry ingedients.

In a second mixing bowl combine wet ingredients. Add wet mixture into dry mixture until blended.

Gently add raspberries into batter and mix evenly through batter.

Spoon batter into muffin cups and bake for 20 minutes.
